THE chair of Melksham Community Meals, Sue Mortimer, has created a recipe fit for the queen.

Sue has taken up the invitation from upmarket department store Fortnum and Mason’s to create a Platinum Jubilee Pudding recipe to celebrate The Queen’s Platinum Jubilee later in the year.
Sue’s own recipe was a marble pudding mixture of dark chocolate, strawberry and orange and a light mixture of vanilla, apple and lemon. The topping was cream, blueberries and raspberries in the design of a Union flag.
Sue says, “Before submitting the entry I first tried it out on the family, making my husband Bob a 75th birthday cake. The grandchildren enjoyed it!
“The second lot of guinea pigs were the Wednesday Singing Group who enjoyed the surprise cake at tea break declaring it to be delicious. This gave me the confidence to submit the entry for the national competition.”
The initial round of judging takes place from Monday 7th February. The entries will gradually be whittled down over the next fortnight, with judges selecting their top five in the week commencing 21st February.
In the week of 14th March, the five finalists will be invited to Fortnum & Mason in Piccadilly, London, to bake their recipe for the judging panel. The judges, one of who is Mary Berry, will announce the winner!
Sue adds, “My granddaughter has told me that even if I don’t win, not to worry as the cake is really delicious!”
